Cooking Time

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

  • 1 lb. chicken breast
  • 1 large carrot
  • 2 large sweet potatoes
  • ½ cup cooked brown rice

  1. Cook the rice as directed on the instructions.
  2. Prep your veggies by chopping the sweet potatoes into 1-inch cubs and slicing the carrot into 1-inch pieces.
  3. Add the sweet potato to a pot and cover with water. Bring to a boil and cook for 20 minutes on medium heat.
  4. While the rice and vegetables are cooking, heat a skillet with oil and cook the chicken for about 5 minutes per side. Use a meat thermometer to ensure the interior of the chicken reaches 165° F. When the chicken is done, let it rest a few minutes and then cut into 1-inch pieces.
  5. When the potatoes are finished, mash them in a bowl.
  6. Add the chicken and sweet potatoes to the skillet, then add the sliced carrot. Stir it all to combine. Cover the pan, reduce the heat, and cook for 10 minutes until the carrots are soft.
  7. Let cool before serving.
